Step into the kitchen before the job begins.

Stage—pronounced “stahzh”—is a structured, short-term restaurant shadow experience. It gives aspiring culinary professionals a chance to observe a real kitchen, understand its rhythm, and test their readiness before pursuing a position.

A bridge between interest and employment

Culinary training teaches technique. A working restaurant teaches timing, communication, awareness, standards, and how an entire team moves together. Stage is designed to let an emerging culinary artist experience that environment before the pressure of a first day on the job.

Through relationships across Chicago’s restaurant community, Culinary Canvas Chicago will connect prepared participants with participating kitchens for structured observation, exposure, and feedback.

What a participant can gain

A stage can help someone understand whether a particular kitchen, culinary path, or service environment fits their goals. It also gives the participant a clearer picture of what professional readiness looks like.

The experience

Learn the rhythm before joining the line.

Each placement will be shaped with the host restaurant so the participant knows what to expect and the restaurant knows what it is prepared to offer.

Open your kitchen with purpose

We are seeking Chicago restaurants willing to host carefully coordinated, short-term stage experiences. A host location can offer something uniquely valuable: a credible view of professional service, kitchen culture, and the standards that turn interest into readiness.

What we ask of a host

  • Designate a restaurant contact or supervising team member.
  • Help define the schedule, appropriate access, attire, and expectations in advance.
  • Provide a safe, respectful, and supervised learning environment.
  • Offer observation and exposure that do not replace the work of scheduled employees.
  • Follow applicable workplace, wage, food-safety, and insurance requirements.
  • Share practical feedback when the restaurant is able to do so.
